30-Day Vegan Challege

OK, so remember when I told you guys that the hubby and I are doing a 30-day vegetarian challenge?? Well, we decided to do it vegan-style instead! I am super pumped, today was the first day and I’m lovin’ it. For breakfast I had toast with jam, my snack was a few pieces of celery with peanut butter, lunch was my awesome black bean wraps with a grapefruit AND dinner will be roasted veggie couscous with walnuts! Don’t worry, I’ll post the recipe soon 🙂
