Carrot Salad

Every now & then I like the side dishes on my plate better then the main attraction. Last night I went out to dinner with a great friend and she suggested one of her favorite restaurants I had yet to try. I had the seared tuna with couscous, eggplant puree and garlic yogurt. But aside from all of that, I was more in love with the carrot salad that garnished my plate. It was garlicy and amazing!

Carrot Salad
Makes about 1 cup
1 large carrot, grated (or you can use already grated carrot from the grocery store)
1 clove of garlic, grated
1/2 lemon, zested & juiced
1/2 shallot, chopped fine
olive oil, very small drizzle
salt, to taste

Toss it all together! MMM..
