Fall Flavors

OK, so yesterday I posted about what kind of flavors comfort me in the fall. Tonight I decided to use the same spices but made a very different dish. I’m not 100% sure to call this but I think I will go with.. Spicy Smoked Sausage & Rice.

Spicy Smoked Sausage & Rice
Ingredients
Serves 2
1 Small onion, chopped
2 Cloves of garlic, chopped
1/2 Link store-bought smoked beef sausage, sliced about 1in. thick (I found this in the deli meats/hot dog section of the grocery store, you can also use smoked turkey if you prefer)
1 Can black beans, drained but not rinsed (I love these, I can eat them every day!)
1 tsp Cumin
1 tsp Chili Powder
1 tsp Chipotle Pepper
1 Lime, zested and sliced in half
Salt & Pepper to taste
Cooked rice, brown or white

Start off by sauteing the onion and garlic in good olive oil. What great recipe doesn’t start off with those two ingredients? MM.
Anyway, once the onion and garlic start to take on a little color, add the sliced sausage. Allow these ingredients to merry at medium heat. The great thing is that the sausage is already cooked so all you want to do here is get the edges a little charred!

Once things are smelling amazing, add the black beans. BUT WAIT! Don’t throw away the can yet. Go over to the sink and add about 1/4 cup of water and swirl (technical word) it around to gather up the juice left around the inside of the can. Pour the water over the sausage and bean mixture, turn the heat down to low and allow it to simmer and thicken.

This is where it gets a little strange, but please, trust me! Add the lime zest and turn off the heat after about 10 minutes.

To assemble place the rice on the plate and pour the sausage mixture over the rice. Serve it with a lime half.. but it’s not just a garnish, use it! Squeeze the lime over the dish before digging in!

Oh, and a little roasted broccoli never hurt anyone ;).
