I have a problem.. I can’t stop eating roasted chickpeas with cauliflower! At first I thought it was an infatuation with the warm, nutty flavors but I now recognize that it is a problem. All I think about it eating this every day! Every time I go to the grocery store I pick up the biggest head of cauliflower I can find and I always make sure to put two cans of chickpeas in my cart. You’re probably getting sick of my spice combination but try this as a side dish or snack and you will be over the moon!
Roasted Chickpeas & Cauliflower
Ingredients, serves 2 – 4
1 can of chickpeas, drained & rinsed
2 cups of cauliflower florets
1 tsp chili powder
1 tsp cumin
1 tsp chipotle powder
Salt & pepper to taste
Extra virgin olive oil, just enough to drizzle over everything
I put everything on a sheet pan and roast at 415F for 20 minutes. Usually about half-way through the cooking process I go in and flip everything around a bit. At the end you have this!
The cauliflower gets really nutty and and chickpeas are firm on the outside but butter and smooth on the inside. It’s really just delicious. Happy eating!
