My Family Chili

I didn’t grow up in a home where chili is a fall or winter staple. My mom made chili her own way for the first time about 10 years ago and it was so good! Now I make chili pretty often and it’s SO comforting and filling! Everyone seems to like this chili so give it a try! It’s really easy and you will have a steaming pot of homemade chili in 40 minutes or less!

My Family Chili
Serves 4-6
Ingredients
1 medium onion, chopped
3 large garlic cloves, chopped
1 lb ground beef (or chicken, that’s what I used this time)
1 large can of crushed tomato
1 8-oz can of tomato sauce
2 15-oz cans of kidney beans, drained and washed
2 tbsp cumin
3 tbsp chili powder
1 tbsp chipotle powder (if you don’t like your chili too spicy cut this down to 2 tsp)
Salt & pepper to taste
Extra virgin olive oil
Heat enough oil to coat the bottom of a large pot on medium heat. Cook the onions for about 3 minutes and add the garlic, cook for another 2 minutes.
Add the ground beef, or chicken, and cook until the edges turn slightly brown.
Next, add the crushed tomato, tomato sauce, kidney beans & spices!
Allow everything to simmer on low heat with a lid on the pot for about 15 minutes.
I like to serve everything up with cheese!
