Candy Apple Pie

WOW – I feel like years have passes since my last post! So many things have happened over the last few days. Let start by a recipe to a delicious apple pie!

I was bored for the first time all week and happen to have some apples on hand along with two frozen pie shells. I decided to attempt an apple pie. I’ve actually only made an apple pie one other time, about two years ago and I followed a recipe, weird, huh?

Traditional apple pies have green or yellow apples and a lot of sugar to even out the tartness. I only had the Red Delicious variety and decided to give it a shot!

Caramel Apple Pie
2 pie shells, I used one (thawed) frozen deep dish pie shell and one Pillsbury refrigerated pie crust
3 Red Delicious apples, peeled and sliced thin
25 soft caramels
1 tsp flour
1 tsp Splenda
1 tsp nutmeg
1 tbsp cinnamon
2 tsp lime juice

Start by preheating the oven to 350F. Poke holes in the deep dish crust and place in the oven for 10 minutes. In the meantime, slice your apples and place them in a bowl. Add all the other ingredients and toss it all together.

Pour the apples into the deep dish crust and unroll the refrigerated crust over top and crimp the edges. Make sure to cut a hole on the top for any steam to escape!
Bake this beauty for 40 minutes and enjoy hot with vanilla ice cream and cool whip!
