Chocolate Coconut Scones

I made scones. I love scones. I fell in love with them when I worked for Starbucks back in the day. I use to think they were dry and gross but that’s because I never had fresh scones. At Starbucks they are delivered fresh every morning. I’ll take that!

The scone bug bit me when I read Jessica’s blog this week and I knew I wouldn’t be able to rest easy until I made them. So, yesterday morning, after calling out of work because of this dumb cold/cough I’ve had for 7 DAYS STRAIGHT, I made scones instead of going back to sleep. Oh, what I do for food.

rustic or messy?

I followed this recipe only changing a few things along the way.

  • I used coconut extract instead of vanilla
  • I added 1 tbsp of cinnamon to a depth of flavor
  • When my dough was a little dry during the kneading process, I added about 1/4/ heavy cream.
  • Lastly, after I cut my dough with a measuring cup (don’t hate), I brushed them with heavy cream and sprinkled turbinado sugar over the top. I’m sure any coarse sugar will do.

Oh, and instead of making the glaze in Jessica’s recipe, I just topped the scone with a little homemade whipped cream. Yeah, I did that and I’m not sorry.

It was a great breakfast, now back to bed to hopefully kick this cold for good.
