Vegetable Tian

This is simple, fresh, and delicious. Shall I go on? I thought so.

A Tian is a French dish of roasted vegetables. Any of your favorite veggies will do. Just be sure to cut everything the same thickness so it cooks evenly.

This can be a side dish all on it’s own. You can add the leftovers to your morning eggs (did that). You can layer it in a tortilla with hummus and call it lunch. You can make a quesadilla with it by adding cheese, meat or beans and serving it with salsa (did that). In fact, I highly recommend the quesadilla. Or you can pick it up with your fingers minutes after it comes out of the oven and eat it. What? Who did that?

Vegetable Tian
Serves 2

2 Roma tomatoes, cut in 1/2 inch rounds
1 small onion, cut in 1/2 inch rounds
1 zucchini, cut in 1/2 inch rounds
1 tsp Herbs de Provence
Salt & pepper to taste

Preheat the oven to 400ºF. Spray a baking dish with cooking spray and layer all the vegetables. Sprinkle the seasonings on top and bake for 45 minutes – 1 hour or until the vegetables are caramelized.
