Super Simple Balsamic Dressing

I really don’t like bottled salad dressing. What’s the point? Yes, there is that obvious ‘to make your life easier’ answer. BUT you can make a delicious dressing at home for way less money and they are healthier for you. This is just one of my favorite.

Super Simple Balsamic Dressing
makes about 1/2 cup

1/4 cup Balsamic vinegar
1 tbsp yellow mustard
1 small garlic clove, grated
1 tbsp olive oil
salt, to taste

Add everything to a Mason jar and shake until emulsified. You can also add the ingredients to a bowl and mix with a whisk until emulsified.

I poured this over a green simple salad a few nights ago. Just romaine lettuce, avocado, scallion and Kalamata olives.

This was just before we went out of town so I didn’t have much in the fridge. Can you tell?
