I thought I would keep up the whole ridiculously long post title thing. I’m good at it.
So remember when I went to yoga last week? Well, all I could think about during the class was eating pizza. Oh, and how much pain my arms were in. Usually I take a break from cooking on the weekends and we eat take out or have pizza delivered. Pierre is pepperoni pizza kind of guy and while I love it, too, I’d much rather have a gourmet slice.
This pizza was filling, healthy and really quick to put together. I used a no-yeast dough recipe because I didn’t feel like going to the store for more yeast. If you have a favorite dough recipe go with that, or even store bought dough would work. I also poured a garlic lime dressing all over the top. Heavenly.
Roasted Cauliflower Pizza with Olives, Goat Cheese & Mint
Makes 1 – 8″ pizza
1 pre-made pizza dough, raw or cooked
1 cup cauliflower, cut into florets
1 cup baby greens, washed and dried
6 kalamata olives, chopped
2 tbsp fresh mint, chopped
1/2 avocado, cubed
1/8 small white onion, thinly sliced
2 tbsp crumbled goat cheese
salt & pepper to taste
Garlic lime dressing, recipe follows
Preheat the oven to 400ºF. If you are using a raw dough, just roll it out with a rolling pin or lay it out on a floured surface and stretch it with your hands to make a free form pizza. The recipe I followed yielded two 8″ pizzas so it really just depends on how large you want your pizza. Bake the dough for 15 minutes or until it begins to brown on the edges.
Place the cauliflower florets on a baking sheet and coat with olive oil, salt and pepper and roast for 15 minutes or until they start to caramelize. Set aside.
While the dough and cauliflower are baking, add the mint, olives and avocado to a small bowl and mix together.
To assemble, lay the greens on the crust followed by the sliced onion, cauliflower, olive and avocado mixture and goat cheese. Drizzle the dressing over the top and cut into slices.
Garlic Lime Dressing
Makes approx 3 tbsp
1 lime, juiced, about 2 tbsp
1 large garlic clove, grated
1 tsp olive oil
1/2 tsp salt
Add all the ingredients to mason jar and shake to emulsify. You can also add all the ingredients except the oil to bowl and slowly whisk in the oil to emulsify.
This is a winner.
