Chicken Taquitos

Here’s another great recipe for football season. It’s cheap, easy and delicious. Triple threat!

I made these while Pierre was out of town for work so I froze them for future snacking. Let me tell you – amazing idea. Just pop them in a 350 ºF oven for 20 minutes or so and dunk in salsa. MMM.

Chicken Taquitos
Makes 6

1 cooked chicken breast, shredded
1/4 cup cooked corn kernals
1/4 canned black beans, drained & rinsed
1/2 small onion, chopped
3 tbsp Greek yogurt
1 avocado, cubed
1 tsp cumin
2 tsp Mrs. Dash Southwest Chipotle
Salt & pepper to taste
6 – 8″ flour tortillas
Your favorite salsa

Preheat the oven to 400ºF. In a medium bowl mix all the ingredients except for the tortillas. Fill the tortillas and roll to seal the edges. Place on a baking sheet seam-side down.

Bake 18 – 20 minutes or until they are golden and crisp. Serve up with your favorite salsa!
