This salad is so easy! It’s delicious, healthy and comes together in 10 minutes or less. I just love it.
I haven’t made anything other than chips with kale but recently I started sauteing it and using it in place of spinach. It was a good move on my part.
Warm Kale & Cabbage Salad
1/2 bunch kale, about 3 – 4 cups, washed & torn into pieces
1/2 head of cabbage, shredded (or 2 cups of shredded bagged cabbage)
1 lemon, juice and zest
1 medium garlic clove, grated
1 tsp olive oil
Salt & pepper to taste
Heat a large skillet over medium high heat and add the olive oil. When the oil is hot add the cabbage and kale. Char for 5 minutes or so, until the leaves begin to brown. Add the remaining ingredients and toss. Once the lemon juice is absorbed into the leaves, about 2 minutes, turn off the heat and serve.
Serves two and you better believe I ate all of that myself. I want more.
