Smokey Curry Chicken

Plain and simple. If you like chicken you should make this. As most of my recipes go, you don’t have to use the chicken quarters, whatever kind of chicken you have on hand will be fine but the cooking duration will be different. The flavor combination here is excellent.

Smokey Curry Chicken
Serves 2

2 bone-in Chicken leg quarters
1 tsp curry powder
1/2 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp smoked paprika
1 lemon, juiced
Olive oil
Salt & pepper, to taste

Preheat the oven to 400ºF. Toss the chicken in the spices, lemon juice and olive oil.

Place in a baking sheet and cover with foil. Roast for 1 hour or until cooked through. Broil for 3 – 4 minutes until it’s browned.

This would be awesome with the carrots I made a few weeks ago!
