Falafel Burgers with Tahini Dressing

My 7 month old (WAHT??) eats these which means you will love them. So quick and easy to put together, healthy and super filling. I dolloped a ton of tahini dressing on top because I add it to almost everything I eat. Have you tried it yet? It’s life changing.

Falafel Burgers
makes 4 – 6

1 can chickpeas, drained & rinsed
2 scallions, rough chopped
1 garlic clove, rough chopped
1 cup fresh cilantro, packed
1 cup fresh parsley, packed
1 tbsp ground cumin
1 tsp smoked paprika
Salt & pepper, to taste
1/4 cup water (you may not need it all)

Tahini Dressing
1/2 cup tahini paste
1 large garlic clove, grated
1/4 water
1 lime, juiced
Salt, to taste

Preheat the oven to 400º F. Add all the falafel ingredients to the food processor and blend until smooth. Add the water slowly until the mixture is smooth but not runny. Form 4 – 6 patties in the size & shape of the buns you are using. Bake greased baking sheet for 15 – 20 minutes, or until the edges start to brown.

Meanwhile, prepare the dressing by mixing all the ingredients in a bowl and whisking until it comes together. The lime juice will cut through the tahini and it will look like its curdled but just keep whisking and it will come together. Add more water (thinner) or tahini  (thickener), if necessary, until the consistency is spreadable. Load the patties onto toasted buns and top with tahini dressing and your favorite burger toppings.

This would actually make a delicious appetizer if you form mini falafel balls and serve them up with the dressing on the side. Win!
