This is a perfect little snack or appetizer! You could make this in less than 30 minutes. I love that about this recipe.
Loaded Southwestern Sweet Potato Bites
1 large sweet potato, cut into 1/2 in rounds
1/4 onion, chopped
1 large garlic clove, chopped
1/4 cup corn kernels, frozen works great
1/4 cup canned black beans, drained & rinsed
1 cup kale, chopped
2 oz cream cheese
1/4 cup shredded cheddar cheese (I was out so I used shredded Italian blend. Any cheese will do!)
1 tbsp ground cumin
1 tsp smoked paprika
salt & pepper to taste
Coat the sweet potato rounds in olive oil, salt & pepper and roast in a 400 degree oven for 15 minutes. In the meantime, add 1 tbsp olive oil to a large skillet over medium high heat and saute the onion and garlic until fragrant. Add the corn, beans, spices and kale. Mix everything until incorporated well and the kale has wilted. Turn the heat down to low and add the cream cheese. Turn the heat off and mix everything together until the cream cheese is melted.
Add a tsp of the mixture to the sweet potato rounds and top with a pinch of the shredded cheese. Put the rounds back into the oven until the cheese is melted, about 7 minutes.
You could easily make this dinner by serving it as a loaded potato. If you’d like meat in this, just add 1/2 pound ground chicken or turkey before adding the corn and beans and continue the recipe steps, adjusting seasonings. This is delicious, filling and a crowd pleaser!
