When I tell you that you can eat this spread on anything, I mean it. It has everything you could ever want to consume in one sitting. It’s salty, a little sweet, tangy, creamy AND chunky, and garlic-y. Ugh, I wish I had more right now because I would just eat it with a spoon.
Creamy Avocado Feta Spread
Makes about 1/2 cup
1 ripe avocado, pit and skin removed
1 tbsp mayonnaise, you can substitute with greek yogurt or sour cream
1 garlic clove, grated*
1/4 cup crumbled feta cheese
Salt & pepper to taste
In a small bowl mash the avocado with a fork. Stir in the remaining ingredients until combined.
* If you prefer a milder garlic flavor you can use 1/2 tsp garlic powder instead, or omit the garlic all together. The fresh garlic makes this a very garlic-y spread.
I made baked sweet potato fries and dunked them in but let your imagination run wild. Think pasta sauce, dip for ANY vegetable, spread on toast, spread on a grilled cheese sandwich (guilty), stuff a chicken breast or filet of fish, toss with shrimp, use as a salad dressing. Oh my goodness, I could seriously go on.
