Greek Orzo Salad

This is another super simple, delicious and satisfying salad.

D7K_3848Remember when I told you that the temperatures here are frightful? Well, it’s pretty common for me some people to gain weight in this kind of weather. I just want to lay on the couch curled up with whipped cream topped hot chocolate and a plate of cookies and a huge bowl of pasta and chili and biscuits. Okay, well maybe not all at the same time and definitely not in one sitting but you catch my drift.


This recipe covers the pasta part and I don’t feel guilty about eating it. I also served this warm so I didn’t have to eat it with mittens and a hat on. I’m also proud to say that this is the first time in 6 years I haven’t gained weight during winter. But, sadly, winter is not over.

Greek Orzo Salad
Serves 2 

1/2 cup cooked orzo pasta (you could use quinoa or any other small cut pasta you like)
2 Roma tomatoes, chopped small
2 tbsp onion, chopped small
1/4 cup parsley, chopped
6 – 8 kalamata olives, chopped
1 lemon, juiced
1/4 cup crumbled feta cheese (I started buying the block of feta and crumbling it myself and I prefer it)
salt & pepper to taste
1 tbsp olive oil

Add all the ingredients to a bowl while the orzo cooks. Once it’s ready drain the water and add the hot orzo over the ingredients and stir. Serve warm.


This can easily be made a healthy dinner with any grilled or baked lean protein like chicken, shrimp, fish or tofu.
