Sometimes the classy girl in me just wants to slap some cheese in between two slices of bread, slather it with butter and grill it until the cheese is melty and delicious.
A grilled cheese sandwich is a go-to meal for us on weekends about twice a month and I’m not sorry. Last weekend I decided to get fancy and add thinly sliced apples, spinach and random cheeses I had in the fridge.
1 small apple, core removed & thinly sliced (I used a small Honey Crisp and only needed about half, just snack on the rest!)
8 -12 slices of cheese*
4 slices whole grain bread
handful of baby spinach (I only used spinach in my sandwich because Pierre didn’t want his to taste ‘weird’. Yeah)
Cooking spray (or butter)
Here’s where it gets really complicated.
Bread —-> Cheese —-> Apple —-> Spinach —-> Cheese —-> Bread.
Add cooking spray (or butter) to a skillet over medium heat. Grill the sandwich for 5 – 8 minutes on each side, or until they are brown and toasted and the cheese is melting.
*Cheddar cheese would work great in this but I didn’t have enough cheddars so I used a combination of cheddar, aged swiss and Manchego. I liked the flavor this gave because each cheese was so different, one mild, one sharp and one salty. You should experiment because, let’s face it, any cheese would work in this
