This recipe may not look super appealing but it’s so delicious! I took a little inspiration from Bev and it totally hit the spot. This recipe is filling and very nutritious. Lentils are a great source of protein and have tons of vitamins. Pierre isn’t a huge fan of lentils but he gave this recipe two thumbs up. Give it a try!
Lemon + Feta Lentil Tacos
1 cup brown lentils, uncooked
1/4 cup crumbled Feta cheese
1/4 chopped fresh parsley
1 lemon, juice & zest
1/2 tsp olive oil
1 garlic clove, roughly chopped
Salt, to taste
4 small flour tortillas, warmed
Roasted vegetables (i used zucchini and cauliflower seasoned simply with salt and garlic powder but you can use anything you like)
2 tbsp your favorite Ranch dressing (I used this one but you could make your own)
1 tbsp ground chipotle powder
1/2 tsp ground paprika
1 small garlic clove, grated
salt to taste
Add the lentils to a pot of water along with 1 tsp salt, lemon juice and 2 cups of water. Bring to a simmer until the lentils are tender. You may need to add a little more water as it evaporates. While the lentils cook, make the chipotle ranch and set aside. Add all the remaining ingredients to a bowl and set aside.
Drain the lentils even if there isn’t much water left, they should be dry for this. Add them to the bowl and stir, taste for salt. Layer the ranch, lentil and vegetables in the tortillas and serve warm.
