Asian Something

So, as most of you know, my husband, Pierre, is Asian. Well, half really.. but Asian. This means he LOVES rice! You can give him a bowl of plain Jasmine rice and he will be a happy man. This meal was inspired by just that.

There is an Asian grocery/restaurant in our area called Lotte. They have a wonderful produce section and sometimes I get blueberries there for 87 CENTS! AMAZING! In the back they have 6 or 7 little Asian mini restaurants, almost like cafeteria style. You go up to the one you want food from and then they call you over the speaker when your food is ready. Next time I go there I will take some photos to show you… because I know you’re dying to know what it looks like, right??

I was there last month and there was a woman who had SAMPLES. yum. I have one bit of the beef short ribs and I was a goner. So much flavor! This was the secret ingredient:
I wish I knew what the name of this was! This is for short ribs as it claims but I had chicken so that’s what I used! I poured some of this into a Ziplock bag with a chicken breast and let it marinade while I was at work.

When I got home I heated my Cuisinart indoor grill and butterflied the chicken breast and made two out of one! Pierre and I (well, mostly me) can’t finish a whole chicken breast without feeling overly stuffed so we usually split one and stock up on the veggies. The only veggie I approve of not fresh is green beans. They are flash frozen at the perfect time to ensure a delicious bean when thawed! I like to throw mine right on the grill with my chicken!
I decided to kill two birds with one stone (get it? ha!) and cook more chicken for lunch the next day. The chicken on the right was seasoned with salt, pepper, cumin, paprika and Mrs. Dash Southwest Chipotle.

When when the chicken was cooked through I served it up with the grilled green beans (all these need is salt!) and white rice that Pierre cooked in the rice cooker earlier that day.
This dinner was really simple but super delicious!
